The King Oyster mushroom is a favourite for many, known for its meaty texture, mild flavour, and versatility in cooking. It is one of the largest species in the Pleurotus (oyster mushroom) genus, hence the name, with thick white stems that typically grow to 10-20cm long and 3-5cm thick.
Native to the Mediterranean, North Africa and the Middle East, it is widely cultivated due to the relatively easy growing requirements and enjoyed all around the world.

What is Liquid Culture?
Mushroom liquid culture is essentially live mushroom mycelium which grows within a liquid full of nutrients that provide the necessary energy to support the mycelium. It results in much more rapid mycelium growth through a substrate compared to inoculation with spores, making it a better method to get to your fruitful final stages quicker and enjoy those amazing mushrooms.

Cultivation Tips
Preferred Growing Medium: Supplemented sawdust, straw, or hardwood chips but they will happily grow on lots of mediums such as wheat, rye, rice, corn, bamboo, cotton, hemp and coffee waste (to name a few!).
Temperature: Optimal growth at 18 – 24°C (64 – 75°F).
Humidity: Requires 85 – 95% humidity for fruiting.
Light: Indirect light to trigger fruiting.
Harvesting: Ready to harvest in 2 – 3 weeks; cut at the base of the stem.
Interesting Facts about King Oyster
Scientists classify King Oyster mushrooms as Pleurotus eryngii. The name “eryngii” refers to the genus of plants (Eryngium) they were originally found growing near in the wild.
Their meaty texture means they’re often used as a substitute for scallops and chicken in vegetarian and vegan recipes.
Unlike other oyster mushrooms, King Oysters grow individually or in small groups rather than large clusters.
Culinary Uses
King Oyster mushrooms are incredibly versatile in the kitchen. Their firm, meaty texture holds up well in many dishes:
- Sautéing or Stir-Frying: Their firm texture holds up well to high heat, making them ideal for stir-fries.
- Grilling or Roasting: The thick stems can be sliced and grilled or roasted for a meaty, smoky flavour.
- Braising: They absorb flavours well, making them perfect for braised dishes.
- Raw: Thinly sliced, they can be eaten raw in salads or as a garnish.
